Lamb loin cooked

Clean up the lamb loin from the skin with a sharp knife from the tail (the thin part) to the upper part of the spine (the thick part). Then salt it, smear it with the olive oil, rub it with the pepper and roast it on a preheated hot pan for 30 seconds at each side in order to remain juicy. At the end put it in a preheated oven at 180°С/360°F for 6 minutes, depending on the desired level of roasting.
