Rub the chops with the spices and leave them aside. Chop finely the garlic and stir it with the mustard and the olive oil. Then smear the chops and leave it in the fridge for 1 day in order to get marinated. Roast the chops at preheated hot pan/grill. The cooking time depends on their thickness. The approximate time for cooking is 10 minutes per side. It is recommended to turn them around periodically in order to prevent overcooking. If you use cooking thermometer, the temperature in the center of the chop should be 58°С/136°F.
